Bistro opens its doors in Exuma

A new bistro-style restaurant has opened its doors on the main island of Great Exuma, creating yet another outstanding culinary experience for the community.

Coral Lounge & Bistro, located at the marina of February Point, offers customers a picturesque view of the ocean in an intimate, casual atmosphere. At the same time, the restaurant is targeting high-quality ingredients with an emphasis on presentation.

Sarah Swainson, head of food and beverage at February Point, said the reception from both locals and tourists has been fantastic.

“We are trying to make it a difference experience. We have a very well presented but casual menu, and our spot beside the marina is lovely with a pleasant breeze,” she explained.

Coral Lounge & Bistro is open on Thursdays, Fridays, Saturdays and Sundays from 2pm until 10pm. The venue is undergoing a soft opening, Swainson said, and longer opening hours are expected in the near future.

The menu is, of course, inspired by the sea, including a Creamy Conch Chowder, Zesty Coconut Shrimp and a diced tuna tar tar with Teriyaki, green onions and sesame seeds.

Bistro Burger, a Blackened Group Sandwich, Ahi Tuna Wrap and Cracked Lobster Sandwich are available for those with a larger appetite.

“We are also in the process of tweaking our menu, so stay tuned,” Swainson added.

The opening of a new restaurant at February Point is part of a general resurgence for the development, which entered into a 50/50 joint venture with the government last spring. According to various media reports, U.S.-based developer John McGarvey and a group of investors are seeking to develop up to 1,000 acres in partnership with the public sector.

Residential and commercial development are both expected for the 1,000 acres.
